All entree selections include side dishes of garlic mashed potatoes, vegetable medley, mixed green salad and baked bread.


Beef
~Filet Mignon MacGregor topped with pistachios, blue cheese crumbles and served with our signature bearnaise sauce (+$5 ea.)
~Prime Rib Cabernet Au Jus (Chef-carved for groups of 50+)
~New York Strip pan seared in a green peppercorn brandy sauce
~Denver Leg of Elk (Chef-carved for groups of 50+, +$7 ea.)


Pork & Lamb
~Roasted Pork Loin served with a choice of either: Apple Brandy Sauce, Mushroom Sauce or Mango & Mandarin Orange Sauce
~Leg of Lamb served with a choice of either: Brandied Mint Sauce, Cranberry Peppercorn Sauce or a Rosemary Demi Sauce
Chicken
~Chicken Picatta served with a lemon butter sauce topped with Capers
~Chicken Marsala served in a mushroom marsala sauce
~Black Canyon Chicken- pine nut crusted chicken breast served over a mushroom ragout and topped with smoked mozzarella
~Chicken Saltimbocca- an egg battered chicken breast topped with fresh baby spinach, proscuitto ham, melted mozzarella with a lemon wine sauce
Seafood
~Baked Ruby Red Trout with a smoked red pepper coulis and mango puree
~Broiled King Salmon served under a lemon caper beurre blanc
~Shrimp Carbonara in a red bell pepper and proscuitto ham cream sauce
Pastas
~Penne Pasta with a choice of sauce: Carbonara, Marinara, Marsala or Four Cheese Cream Sauce.
(Chicken or Shrimp can be added to these dishes)
